Simple Vanilla Cupcakes Recipe

These simple vanilla cupcakes are soft, fluffy and easy to bake at home. They are perfect for birthdays, tea time, lunch boxes, kids’ treats or family gatherings. The recipe uses basic ingredients and gives light cupcakes with a sweet vanilla flavor.

  • ¾ cup sugar
  • ½ cup butter
  • 2 eggs
  • ½ cup milk
  • 1 teaspoon baking powder

For Simple Buttercream

  • ½ cup butter
  • 1 cup icing sugar
  • 1 tablespoon milk
  • ½ teaspoon vanilla essence

Instructions

  • Preheat your oven to 180°C / 350°F. Line a cupcake tray with cupcake liners.
  • In a bowl, beat butter and sugar until light and creamy.
  • Add eggs one by one and mix well.
  • Add vanilla essence and milk. Mix again.
  • In another bowl, mix flour, baking powder and salt.
  • Add the dry ingredients to the wet mixture and mix gently until combined.
  • Fill each cupcake liner about two-thirds full.
  • Bake for 15–18 minutes or until a toothpick comes out clean.
  • Let the cupcakes cool completely before decorating.
  • For buttercream, beat butter until smooth. Add icing sugar, milk and vanilla essence. Mix until creamy and spread or pipe over the cupcakes.

  • Do not overfill cupcake liners.
  • Let cupcakes cool before adding frosting.
  • Use room temperature butter for better texture.
  • Add sprinkles for a birthday-style look.
