  • 2 large boneless, skinless chicken breasts
  • 1 cup fresh spinach, chopped
  • 1 cup shredded mozzarella cheese
  • 1/4 cup cream cheese, softened
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/2 teaspoon Italian seasoning
  • 1/4 cup grated Parmesan cheese

Instruction

  1. Prepare the chicken breasts by rinsing them under cold water and patting them dry. Slice each chicken breast horizontally to create a pocket.
  2. In a medium bowl, combine chopped spinach, shredded mozzarella cheese, softened cream cheese, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
  3. Stuff the chicken breasts with the spinach and mozzarella filling. Rub the outside of the chicken with olive oil.
  4. Preheat the oven to 375°F. Place the stuffed chicken in a baking dish, sprinkle with Italian seasoning and grated Parmesan cheese. Bake for 25-30 minutes until the internal temperature reaches 165°F.
  5. Let the chicken rest for 5 minutes before serving.
