  • ½ cup unsalted butter, melted (115 grams)
  • 24 ounces cream cheese, softened (680 grams)

  • 3 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • ½ cup sour cream (120 grams)
  • 1 ½ cups fresh raspberries (about 180 grams)
  • 1 tablespoon cornstarch
  • ¼ cup chopped pistachios (about 30 grams)

Instructions

  1. Preheat oven to 325°F (160°C). Wrap the outside of a 9 inch springform pan with foil to prepare for a water bath.
  2. In a bowl, mix graham cracker crumbs, ground pistachios, and melted butter until evenly combined.
  3. Press the crust mixture firmly into the bottom of the pan and bake for 10 minutes. Let cool slightly.
  4. In a large bowl, beat cream cheese and sugar until smooth and creamy.
  5. Add eggs one at a time, mixing gently after each addition. Stir in vanilla extract and sour cream until combined.
  6. In a small saucepan over medium heat, cook raspberries with cornstarch until slightly thickened.
  7. Pour cheesecake filling over the cooled crust. Spoon raspberry mixture on top and gently swirl with a knife.
  8. Place the springform pan into a larger roasting pan and fill with hot water halfway up the sides.
  9. Bake for 55 to 65 minutes, until the center is slightly set but still slightly jiggly.

  11. Refrigerate for at least 4 hours or overnight.
