  • 3/4 tsp kosher salt
  • 1/3 cup almond butter
  • 2 tbsp almond milk
  • 2 tbsp maple syrup
  • 1 tsp pure vanilla extract
  • 6 oz dark chocolate (60% cacao; good-quality chips or chopped bars)
  • 1 tbsp refined coconut oil
  • 2 tbsp mini rainbow-colored chocolate chips

Cosmic Brownie Protein Bites Directions

  1. Make the Dough: In a large bowl, whisk together the almond flour, protein powder, cocoa powder, and salt. Add the almond butter, almond milk, maple syrup, and vanilla extract. Using a rubber spatula, mix until well combined.
  2. Form the Bites: Scoop heaping tablespoons (about 20g each) of dough and roll into balls (12 total). Place them on a parchment-lined baking sheet. If the mixture is too sticky, freeze for 15 minutes before continuing.
  3. Melt the Chocolate: In a medium heatproof bowl, microwave the dark chocolate and coconut oil in 30-second increments, stirring between each, until melted and smooth (about 90 seconds total).
