These Pumpkin Protein Bars are a low-carb, no-bake snack perfect for fall or anytime you need a nourishing treat. Packed with almond butter, pumpkin puree, pea protein, and warm spices, they’re rich in flavor and nutrients. Sweetened naturally with honey (or maple syrup for a vegan option), they’re soft, satisfying, and incredibly easy to make—no oven required!

Pumpkin Protein Bars Recipe Ingredients

  • ½ cup almond butter (unsalted, unsweetened)
  • ½ cup pumpkin puree
  • 1 oz cacao butter, melted
  • 1 Tbsp honey (maple syrup for Vegan)
  • ½ tsp vanilla extract
  • ½ cup vanilla pea protein (50g)
  • 1 tsp cinnamon
  • ½ tsp pumpkin spice
  • ⅛ tsp salt

Recipe Instructions

  1. Combine almond butter, pumpkin puree, melted cacao butter, honey and vanilla in a medium sized bowl.  Using a spatula, mix until smooth.
  2. Add remaining ingredients and mix well.  (Dough should be almost play-dough like.)
  3. Place dough in a lined 8″ x 4″ baking pan and firmly press down using a spatula.
  4. Refrigerate for an hour, or until set.
  5. Remove from fridge and cut into 8 equal pieces.
  6. Optional: top with melted chocolate, chopped pumpkin seeds and bee pollen.
  7. Store in fridge or freezer.
