  • 1/2 cup almond flour
  • 1/4 cup chocolate protein powder
  • 1/4 cup coconut sugar
  • 1/4 cup unsweetened cocoa powder
  • 2 tablespoons instant coffee granules
  • 1/2 cup nut butter peanut or almond
  • 1/4 cup honey or maple syrup
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup dark chocolate chips

Coffee Protein Cookies Recipe Instructions 

  • Preheat the Oven
  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. Your cookies deserve a comfy bed!
  • Mix Dry Ingredients
  • In a large mixing bowl, combine the rolled oats, almond flour, protein powder, coconut sugar, cocoa powder, coffee granules, and salt. Stir until well mixed.
  • Combine Wet Ingredients
  • In a separate bowl, mix the nut butter, honey (or maple syrup), and vanilla extract until smooth.
  • Combine Mixtures
  • Gradually add the wet mixture to the dry ingredients, stirring until everything is well combined. If it’s too thick, add a splash of water.
  • Fold in Chocolate Chips

  • Scoop and Bake
  • Scoop tablespoons of dough onto the prepared baking sheet, spacing them a couple of inches apart. Bake for 12-15 minutes until slightly firm.
