Ingredients

  • ยฝ cupย almond butter (unsalted, unsweetened)
  • ยฝ cupย pumpkin puree
  • 1 ozย cacao butter, melted*
  • 1 Tbspย honeyย (maple syrup for Vegan)
  • ยฝ tspย vanilla extract
  • ยฝ cupย vanilla pea proteinย (50g)**
  • 1 tspย cinnamon
  • ยฝ tspย pumpkin spice
  • โ…› tspย salt

Instructions

  1. Combine almond butter, pumpkin puree, melted cacao butter, honey and vanilla in a medium sized bowl.ย  Using a spatula, mix until smooth.
  2. Add remaining ingredients and mix well.ย  (Dough should be almost play-dough like.)
  3. Place dough in a lined 8″ x 4″ baking pan and firmly press down using a spatula.
  4. Refrigerate for an hour, or until set.
  5. Remove from fridge and cut into 8 equal pieces.
  6. Optional: top with melted chocolate, chopped pumpkin seeds and bee pollen.
  7. Store in fridge or freezer.
