Cosmic Brownie Stuffed Dates Recipe Ingredients
- 15-20 Medjool dates
- 1 1/2 cups chocolate chips
- Natural rainbow sprinkles
- 1 tbsp coconut oil
For the Edible Brownie Batter
- 1/2 cup almond flour
- 3 tbsp creamy almond or cashew butter
- 1 tbsp cacao powder
- 1 tbsp maple syrup or monk fruit
- 1 tbsp nut milk
- 1/2 tsp vanilla extract
Instructions
- Pit all of the Medjool dates and then set aside.
- Next, make the brownie batter by mixing together the almond flour, almond or cashew butter, cacao powder, maple syrup, vanilla extract, and nut milk in a bowl.
- Stuff each date with some of the brownie batter using a spoon.
- Melt the chocolate chips with the coconut oil in 30 second increments or in a double boiler.
- Dip each date in the melted chocolate and place on a parchment paper lined sheet pan.
- Add some rainbow sprinkles to each date and set the pan in the fridge for 15 minutes to set.
- Store in the fridge and enjoy!
