Chocolate Covered Strawberry Brownies are a rich, indulgent dessert that layers fudgy brownies with sweet strawberry jam, fresh strawberries, and a smooth chocolate topping. This recipe turns a simple boxed brownie—like Ghirardelli—into a bakery-style treat that’s perfect for parties, celebrations, or an elegant dessert craving.
Chocolate Covered Strawberry Brownies Recipe
Ingredients
- ▢Box Brownie Mix, I used Ghiradelli
- ▢1 Jar Strawberry Jam
- ▢3 Cups Strawberries, sliced
- ▢1 ¾ Cups Chocolate Chips
- ▢2 Teaspoons Coconut Oil
- â–¢Flaky Salt
Instructions
- Start by making your brownies according to the package instructions. Once they’re baked, set them aside and let them cool completely before adding any toppings.
- Once your brownies are fully cooled, spread an even layer of strawberry jam over the top, making sure to get all the way to the edges. Then, press your sliced strawberries into the jam in an even layer. I like to arrange them in slightly overlapping rows so that every slice gets a good amount of strawberry in each bite.
- Next, melt the chocolate. Add the chocolate chips and coconut oil to a large microwave-safe bowl. Microwave in 30-second increments, stirring well between each one, until the chocolate is completely smooth and melted — this usually takes 2 to 3 rounds. Once melted, pour the chocolate over the strawberries, using a spatula to spread it into an even layer.
- Sprinkle generously with flaky salt, then transfer the brownies to the freezer for 10 minutes, or the refrigerator for 20 minutes, until the chocolate has fully hardened.
- Once set, slice into squares and enjoy!
Health Benefits
- Strawberries are rich in vitamin C, antioxidants, and fiber, supporting immunity and skin health.
- Dark chocolate (from chocolate chips) contains antioxidants that may support heart health when enjoyed in moderation.
- Coconut oil provides healthy fats that help with satiety and flavor balance.
- Using fresh fruit adds nutrients and freshness to an otherwise indulgent dessert.
